Such a tender and melt in your mouth cookie. You can use your favorite thick jam. Play with tthe dough and the size of the cookies to see what you prefer.
8 oz – 225 g Sugar – 450 g Flour
9 oz – 250 g Ricotta Cheese
3 Egg Yolks – 3 Whipped Egg Whites
1 tbsp – 15 g Baking Powder
4 ½ oz – 125 g Softened Butter
Cherry Jam – Powdered Sugar – Salt
In a bowl put sugar and ricotta cheese then add egg yolks, butter, flour and baking powder then add egg whites and a pinch of salt then stir well and make cookies with a hole in the center.
