INGREDIENTS for the Pasta:
1+1/2 cups (7 1/2 oz./235 g) all-purpose flour, plus more for dusting
1/2 cup (2 3/4 oz./85 g) semolina flour
2 whole eggs plus 3 egg yolks, at room temperature – 1 Tbs. olive oil, if needed
For the Filling:
3/4 cup (6 oz./185 g) fresh whole-milk ricotta cheese, at room temperature
1/4 cup plus 2 Tbs. packed coarsely grated mozzarella cheese,
2 Tbs. mascarpone cheese, at room temperature
2 Tbs. grated Parmesan cheese, at room temperature
2 Tbs. dried bread crumbs – Pinch of freshly grated nutmeg
1/2 tsp. kosher salt – Pinch of freshly ground pepper.
1 egg, lightly beaten – 1 jar (16 oz./453 g) – Kosher salt
Splash of olive oil – Grated Parmesan cheese for serving – Torn fresh basil leaves
